Greg hails from Foster in New South Wales, Australia. He works constantly alongside Brett in developing the dishes for the new seasons. His enthusiasm and focus help to lead our young and energetic brigade. Greg joined the Ledbury in 2009 and is an indispensable part of the team.

General Manager

Darren was born in Dublin and educated at University College, Dublin and The Michael Smurfit Graduate Business School. Prior to joining The Ledbury, Darren worked with Marcus Wareing at The Berkeley and with Adam Byatt at Trinity Restaurant.

With an unwavering attention to detail and passion for service he also takes great pride in mentoring and developing the Front of House team

Sam Lucas

Sam Lucas

Restaurant Manager

Originally from Accrington, Lancashire, Sam started his restaurant career working at a local restaurant. From there he went on to study Hospitality Management at Manchester University moving to London and arriving at The Ledbury in 2011, where he grew into his role of Restaurant Manager.

Both knowledgeable and humble in his approach to service and possessed with an incredible memory for guests, Sam is the epitome of The Ledbury’s service culture.

Seamus Williams-Sharkey

Head Sommelier

Seamus grew up in the Midlands, beginning his hospitality career at The Dormy House in the Cotswolds. From there he spent time at The Nut Tree Inn in Oxfordshire and Hampton Manor. Prior to joining The Ledbury Seamus was also Head Sommelier at Restaurant Story.

Hugely passionate about the industry, his breadth of knowledge and desire to exceed guest expectations is at the forefront of his approach to wine service.


Jeremy Harvey

Assistant Restaurant Manager

Originally from Tucson, Arizona, Jeremy moved to San Francisco where he managed a wine bar in the Marina District and SPQR in Pacific Heights. Arriving in London in 2013, he quickly became an integral part of The Ledbury team where his warmth of character, thoughtfulness and commitment to service is brought to bear on the guest experience on a daily basis.

Anna Mayr

Assistant Head Sommelier

Anna grew up on her parents winery just outside Bolzano, Italy and moved to London at the age of 19 to start her career working at Restaurant Gordon Ramsay at Royal Hospital Road.

After a year at Restaurant La Tour d’ Argent in Paris she returned to London and joined the team in October 2014.
