Jake Leach

Head Chef

From Guildford, Jake has worked in restaurants since a young age, previously spending time at Restaurant Tristan in Horsham and being part of the opening team of Simon Rogan’s Fera at Claridge’s. With his passion for food and eagerness to support the rest of the kitchen team, Jake quickly established himself as an indispensable member of the brigade eventually becoming Head Chef in 2018.

Darren McHugh

Darren McHugh

General Manager

Darren was born in Dublin and educated at University College, Dublin and The Michael Smurfit Graduate Business School. Prior to joining The Ledbury, Darren worked with Marcus Wareing at The Berkeley and with Adam Byatt at Trinity Restaurant.

With an unwavering attention to detail and passion for service he also takes great pride in mentoring and developing the Front of House team.


Jack Settle

Restaurant Manager

From Bolton originally, Jack started his hospitality career at The Punch Bowl at Crosthwaite in the Lake District. Moving to London, he went on to work with Simon Rogan at both Roganic and Fera, as well being part of the opening team at Kitchen Table.

Considerate of both his colleagues and guests alike, Jack’s thoughtful and gentle approach to service is one of his many contributions to The Ledbury.

Seamus Williams-Sharkey

Head Sommelier

Seamus grew up in the Midlands, beginning his hospitality career at The Dormy House in the Cotswolds. From there he spent time at The Nut Tree Inn in Oxfordshire and Hampton Manor. Prior to joining The Ledbury Seamus was also Head Sommelier at Restaurant Story.

Hugely passionate about the industry, his breadth of knowledge and desire to exceed guest expectations is at the forefront of his approach to wine service.

Jeremy Harvey

Assistant Restaurant Manager

Originally from Tucson, Arizona, Jeremy moved to San Francisco where he managed a wine bar in the Marina District and SPQR in Pacific Heights. Arriving in London in 2013, he quickly became an integral part of The Ledbury team where his warmth of character, thoughtfulness and commitment to service is brought to bear on the guest experience on a daily basis.
